For some reason this post didn’t get published last week… 

Sorry I’ve been MIA for a three days; I’ve had a crazy schedule and been a bit sleep deprived.  You’ll get a nice long post today though!  Oh, and I don’t know if many of you saw my post from Valentine’s Day, since I posted twice in one day and it may have slipped by.  Please check it out–Best Dinner Ever!


Yo, what’s up in blogland?  I’m watching Millionaire Matchmaker right now…muy interesante.

Today was pretty good, rather fast, and tomorrow is Friday!!!  The day started off with a nice bowl of oats, standard Kersten-style:  steel cut oats, almond milk, water, Maranatha almond butter, raisins, and cinnamon.  (Reminds me I need to prep my oats for tomorrow!)


Worky worky, then lunchy lunchy eventually.  Today was a ww bread butt with 1/2 a wedge LCL, 1 slice of peppered turkey, carrot and celery sticks, and 1/2 an apple.


After a meeting and more work I had a snack of 1/2 cup lowfat cottage cheese.  In case you wondered, I haven’t been eating as much so I only buy the lowfat kind, rather than the fat-free kind.  Chris doesn’t like fat-free, either, so I might as well buy what he likes too.


We left to go pick up our food order from New Seasons for our workshop, and I ate the other half of my apple in the car.  No pic…

The food was gorgeous!  And not much more compared to me creating it myself.  I forgot to take a pic of the third platter before it was attacked…it was a Mezze platter with hummus, spicy feta, dolmas, spanakopita, olives, and pita bread on the side.  The other two platters are pretty self explanatory, and were yummy!


One of our workshop topics was alternative energy, and I really liked the presentation from our Calvert Investments wholesaler.  He is really passionate about the topic in his personal life, too, and even has solar panels on his house.  Great topic considering I’m getting the green bug and we’re in the Pacific Northwest where green abounds in many ways. 

I know, I know, my platters weren’t quite so green…I forgot to ask the New Seasons deli if I could bring in my own ceramic platters for them to use.  Maybe I can return them for re-use?

Sheesh, it is almost 11 and I have to get up at a normal hour again.  What did you all do today?  OMG, Real Housewives of New York is on.  I may have to watch it some…crazy divas and drama are sucking me in!

Three-peat February 22, 2009

The weekend is already over 😦  Sure felt like it flew by and that I didn’t really get to relax much.

I’m going to be quick so I can get to bed:

Woke up early for a Sunday, made coffee, played with the LB, and nuked my oats:  steel cut oats, 1/2 a ripe nana, cinnamon, chocolate almond milk, almond butter.  Tasty!  I detected the chocolate more in this batch and liked it 🙂


After this I was off to yoga, and The Driz did join the class today!  She did great, too!  Girl, you played like youz  novice, and you looked like a pro 😉  I hit up an upper body workout afterward, and was ruing not hitting the weights for the last 1 1/2 weeks as I did the other workouts.  They are definitely good for the legs, but seem to be lacking for the back and biceps especially.

Once home lunch was a new, delicious creation:  a scramble!  It was one egg + one white, some sliced green bell pepper, left over roasted potato, kalamata olives, feta cheese, and Nature’s Seasons.  I had it served over a piece of whole wheat toast, with some grapes on the side.  Num-num-nummy!


I did a bunch of housework, and was itching to return to the gym to do cardio.  Chris said yesterday that he wanted to go today, so I held off doing it this morning.  I told him to be ready after I got back from the store, but he was still kickin’ it watching TV!  Ahhh!  I was getting a little hungry so I had a snack of lowfat cottage cheese and a handful of Kashi TLC Fire Roasted Vegetable. 


He finally got in the shower and I cleaned the fruits and veggies.  Do you use a fruit wash?  I finally started using one a month ago and can totally tell the difference on my grapes and apples, but not so much on other things. 

Once at the gym I jumped on the elliptical and told Chris I needed at least 30 minutes of cardio.  He was done around 35 minutes; at least I got a good sweat on. 

Here’s where my blog title comes in… not exactly a surprise that we went out to Fajitas for the third night in a row.  I had a small part of a Casuela, a few chips and salsa, and split Carnitas de Pollo with Chris.  Very tasty; I had two tortillas of it.


The restaurant was really busy this weekend, and tonight Noe was all alone serving us.  He brought us a larger than usual La Casa b/c he felt bad the service wasn’t as fast, I think.  I had about half of it.  To. Die. For.

No more food today…that dinner was a little too much and has held me over quite well.  I’m off to bed, and hope to get some good rest.  I didn’t sleep so well last night, although I was in bed and sleeping off and on for about 8 hours.  I love bed, and sometimes miss the days where I would stay in it all day long reading, watching TV, doing crosswords, whatevs.  Do you ever do that?



Tues to Wed February 18, 2009

Quickly my friends, as I’m tired.


Rather blue about my weight loss/fat loss progress… a client told me he’s lost like 20 lbs in 5 weeks on the South Beach Diet and I wanted to crawl in a hole with my measly 10 lbs in 3 months.  I mean, you guys see how I eat, it’s not that terrible, it’s no more than 1500 cals/day most days, and I exercise a lot.  I seriously think my only-half-an-hour of cardio January fucked up the progress.  Whatevs, I’m still motivated and pushing forward.

Usual oats:


Turkey and ww butt sando, Kashi TLC crackers, F-f-f-fuji!

I hit up the gym after dinner (I had just a few sips of the Casuela and gave that and over half of my La Casa to Chris), and felt a little out of it from my funk.  Did one of the four week bikini workouts, an ab workout, and 15 glorious minutes on the elliptical.  I didn’t do as much cardio intentionally; trying to do 45 minutes 4-5 times per week and thought I could use a lighter day time wise.

I ran by the store for a veggie and fruit stock up fest on the way home since I was feeling bad about my progress.  Figured I’m not eating enough fruits and veggies anyway, so buying a lot and integrating them more would be good.


Better day mostly, but I’m so tired. 

Loving the Maranatha in my oats.  If you remember from when I first put it in my oats I said it wasn’t flavorful enough there, but I was wrong.  Today it really shined through and was perfect.


Different lunch today…a little too light.  Spinach salad with turkey and cucumber, carrot and celery sticks, and grapes.


Dinner was ww linguine with Prego sauce and a little canned parm.  Classy, I know.  Tasty, but I forgot the pic!

Master Recyler class was good:  construction & demolition reduction/reusing/recycling; green building & renovation; and event recycling.  Great presenters and some tasty eats:  small homemade kumqwat (sp?) and cranberry scone, few tbsps Costco trail mix (waaaaaaay too salty).

Best dinner ever! February 16, 2009

Let’s get right to the point, people:  dinner at Typhoon on Valentine’s Day was probably the best dinner I’ve ever had in my life.  I’m struggling to think of anything that continued to amaze me like the 15 items we ate Saturday.  Oh, and the endless supply of great wine.  I’ll give you all the details I can remember in a minute…

Saturday started with my headache being horrible and me feeling quite icky from it.  I got up thinking I may go to pilates, but just didn’t feel well enough by the time 9:30 rolled around.  I made coffee, and ate my traditional oats; this was the last of the Barney Butter. 


I was feelin’ better after breakfast, but still not quite right.  I slept a little on the couch; felt so good 🙂

Lunch was two eggs scrambled (accidentally dropped in the 2nd yolk!) in a whole wheat tortilla with a wedge of LCL.  I also had my apple from Friday that I never ate.  Damn pithy Jonagolds got the best of me last week.

The afternoon rolled around and Chris and I mosied to the gym.  The basketball backboard wasn’t quite fixed yet, but they opened up the court and guys were playing half court games.  They got booted at 3pm, tho, for the boot camp class, no pun intended.  😦  That cut my cardio shorter than I’d hoped. 

After getting home I pampered myself a little by painting my toenails.  Sounds rather ordinary, but I haven’t done this in MONTHS.  Last time my little piggies were painted was in September if you can believe it!

Now comes the exciting part…after getting all gussied up Chris and I arrived at Typhoon around 7 for our special group dinner, and so the ecstasy began!  Wine abounded–no corkage fee and lots of people in the wine industry equals tons of great wine!  We brought Kim Crawford 2007 Sauvingnon Blanc, and we also consumed Willakenzie 2007 Pinot Gris, Vidon 2007 Pinot Noir (excellent for such a young wine!!), and some Mumm Napa sparkling white. 

First dish was some sort of mini roll served in a wine glass with a sweet sauce.  No idea what was in here, but it was yummy and hot!


Next came spinach wraps, and vegetable spring rolls.  Mmmmmm!  The wraps had freeze dried shrimp, sliced hot peppers, jicama, peanuts, fried rice noodles (?), and sweet chili sauce to put inside as we pleased.  The rolls were perfectly yummy.


Here we paused for a little gift bag and drawing from our lovely hosts, Eric and Bennie.  We got a bag of Hershey kisses, and some of us got a number for drawing prizes.  Chris and I got to choose between wine, a gift card to Red Robin, and a gift card back to Typhoon…Chris chose Typhoon!  Perfect for me any day!


Next was where the mind was blown!!  Bo Kline’s clam chowder with lemongrass.  Holy. Moley. I know it sounds odd, but if you ever get a chance to visit a Typhoon you MUST try this soup.  Even if you don’t like chowder or lemongrass, somehow I think you will like love this.  I really had to resist eating more than a cup of it.


Up next was a cascading delivery of incredibly yumminess in the form of like 8 dinner entrees and sides. Forgive me I do not know the names of them all! Flaming fish, pineapple curry, green beans, beef with heavenly sauce and peanuts, drunken noodles, fried rice, crab pad thai, and another I can’t remember at this point!  Everything was soooooooooo gooooooood.  This really was heaven on a plate.  I had a little more of the curry since that’s my 2nd love…


I ate plenty, and was full, but thankfully not gut-bustingly-uncomfortably full.  Dessert was really unexciting if you ask me, probably a good thing since dinner was so fabulous.  It was sticky rice and a custard; I had a few bites, but no need to post the pic since it wasn’t so pretty.

After dinner we went to a little bar called Friends in Beaverton, and proceeded to listen to and do some karaoke and drinking.  I didn’t do either, but had fun.  We left around 1am, and I didn’t end up getting in bed until about 1:45.  :sleepy:


I was dead tired in the morning, but still got up for yoga 🙂  My breakfast was a cereal mess…inspired by all you fabu bloggers out there who display these frequently.  Barbara’s Shredded Oats, Fred Meyer Shredded Wheat, and chai spice cereal I can’t remember the name of now.  It was tasty!


Yoga was great today, and since I knew I was heading back to the gym later with Chris I didn’t do anything else after class.  In between gym sessions I did a little cleaning and ate lunch.  A rather boring experience… one scrambled egg on a toast butt with 1/2 a wedge LCL, and 1/2 cup lowfat cottage cheese.  Sorely lacking in fresh fruit or veg, right?


Sometime afterward we went to the gym around 3, and I started off with cardio so I could get in my full 45 minutes to an hour.  I did 35 minutes of fast intervals on the stair mill, and then about 10 minutes on the elliptical.  Chris got booted from the basketball court again, but for volleyball this time.  He was kind enough to let me do an ab workout before leaving, though.  This time I did the Your Flat-Abs Handbook, and it was great!  Lots of stuff for the obliques, and it seemed to be quite effective.

Once home I had a choc. protein shake, and we did some yard work.  I raked around the barkdust to prevent Lily’s footsies from being so messy when she plays catch.  She has done a number on the lawn, too, so I staked & twined off an area in the hopes that it will recover a bit.


You won’t believe it, but we went to Mexican for dinner again. That is like 6 nights in a row we ate out 😦  Bad bad bad bad bad!  I tried to control myself and didn’t have a Casuela, and only had one chicken taco and chips & salsa.  I watched Chris eat a cheeseburger with a fried egg jalapenos, and fries on the side; I almost asked him for a taste at one point it looked so good.



After dinner came shopping at PetSmart and Fred Meyer.  Nothing too exciting here.  Lily had fun sniffing around at PetSmart, and nearly pulled me over she’s so strong!

Once home I unpacked everything and dove into the work recyling.  It took me over an hour to sort out, wash, and put away all the stuff!  That was two weeks’ worth of recycling, and really wasn’t too bad to deal with.

Afterward I rewarded myself with some tasty fruit:  a beautiful Fuji, eaten European style with a knife.  Mmmmmm….. I’m so glad to have crisp, yummy apples again 🙂


Chris later attacked my Maranatha with some Ritz, and I couldn’t forego that a.b. action, so I had one cracker with probably 1/2 a tbsp of a.b.  Very good indeed!

I was going to post this last night (Sunday), but Chris and I kind of got into a tiff and I had to hold off.  Thanks for checking back and reading, though!  I’ll be posting about today (Monday) shortly…. stay tuned.


Heading upstream February 12, 2009

Do you think much about where your food comes from?  The steps products go through in before they arrive in the store?  Other “upstream” facets of your consumption?  Just like most of us have been taught, I’ve focused so much on the “downstream” facets of reusing, recycling, and wasting while forgetting the more impactful lifecycles of the products I consume.  Tonight’s Master Recycler class focused on preventing waste to begin with, rather than just managing what we’ve already consumed; ’twas an eye opener!

In the past most recycling has been motivated by reduction of what is sent to landfills; while this is important, upstream reductions are much more significant environmentally.  Recycling is great, but we must all step back and consider how what we use is sourced, manufactured, transported, and distributed.  For example, I focus a lot on packaging of products I buy…but guess what!?  The actual food and product choices I make have much more of an impact than the packaging choices I make.  Simple enough, I know, but it was totally a “duh!” moment for me tonight.

Seriously, y’all, I’ve been sooooo busy or lazy during my downtime and haven’t posted all the key topics of my Master Recycler course on The Three R’s.  I promise I will do this before the month is over to help give you more information to empower and motivate you to reduce waste in your home and workplace.  Fo’ shizzle!

On to the eats of the last two days…

Yummy breakfast oats just like you’ve seen for the last several days… I ate in a rush b/c I got to work a little later than expected, and had a meeting in like half an hour. 


Lunch:  boooooooring wrap of ww tortilla, peppered turkey breast, avocado, romaine; pithy Jonagold apple 😦 ; yummy Kashi Fire Roasted Vegetable crackers.


Afternoon was busy, eventually had a snack of lowfat cottage cheese before my meeting.  Yawn.  Wanna know what is cool, though?  That card in the background is a thank you from a client for being his financial planner for the last 3 years and helping him 🙂  He was so sly…waited til our meeting was over to give it to me and totally surprised me.  I want to clone him!


Dinner was a visit to West Side Maria, aka Si Senor.  I opted to have a cup of tortilla soup, and chips & salsa.  Oh, and the giant Diet Coke that is equivalent to two cans :shocked: 


Once home I played with the LB, changed, and went to the gym for a leg and cardio sesh.  I stopped at the basketball court on my way in b/c it was closed, and found out some stupid twats hung on a rim and BROKE THE BACKBOARD.  WTF?!  I was instantly saddened b/c I knew Chris would be out of luck trying to play b-ball there for a while.  Shit.  They said it may take weeks to fix.  What I want to know is why they can’t switch out one of the boards from the side of the court and re-open it sooner than later.  Whatevs.

My leg workout was good, and cardio was a tough 45 minutes on the stair mill.  Unlike Monday night, I wanted to get off after 5 minutes and the sesh felt so grueling!  Ahhhhhhhhh!  Somehow I hung in there and sweated my ass off for the full 45.

Once home I made a Genisoy choc protein shake, and had a little spoon of Maranatha a.b.  on the side.  That’s one of Chris’ baby spoons!  LOVED the a.b….SO tasty and refined.  And, it dawned on me that it is not sticky, unlike Barney Butter that is super sticky just like most peanut butters. 


I totally got depressed looking in the mirror when I went to take a shower.  I’ve slimmed down and toned up some, but I’m still jiggly, unfirm, bumpy here and there, and somewhat scary looking naked.  😦  I feel skinny sometimes, but after looking in the mirror I just felt fat and wondered when I’m going to lose the icky body.  My problem areas are all over, all over, and all over.  Seriously, stomach/sides, fronts of my thighs, and backs of my arms bug me the most.  I think I’m going to hit up the fitness mags for some more intense bikini-oriented workouts for the next 5 weeks.

On to Wednesday

Late start this morning = ate at home.  I used Maranatha in my oats, but the flavor was a little too tame…. I don’t want to add more b/c of the caloric contribution, so perhaps I’ll just live with it or find another add in to mix things up.  I still did like the creamy toastiness imparted by the Maranatha, tho. 


Lunch today was a business affair at The Stock Pot.  I had hot tea, chicken with wild rice, sauteed green beans & carrots, and a whole wheat roll with butter.  I was careful not to eat too much since the food was good; I took my time and ended up not feeling full 🙂  But then the cheesecake arrived 😐  It was a toffee flavor, I think, with a little chocolate sauce over the top.  I had just a few bites and said no to the rest.  No pics b/c of the table set up, crowd size, and b/c the speaker was actively presenting while we ate.  It was pretty, tho!

No afternoon snack since lunch carried on until about 1:30, and we left early because of my Master Recycler class tonight.  Chris mentioned going to Eastside Maria, aka Fajitas, and I couldn’t help admitting that it sounded good.

I had part of a Casuela, tortilla soup, some chips & salsa, and the grand finale of La Casa.  Mmmm.

Busy busy bee February 2, 2009

Today was pretty much non-stop work action from 9 to 5, and I feel like it was a good day overall. 

Do you guys watch Top Gear on BBC America?  It is so funny, informative, and entertaining.  I’m watching the Winter Olympics Special episode right now.  They’re going to be using cars to complete sports such as target shooting, slalom, and more! 

This morning I realized I forgot to prep my oats :|, so I had to grab something quick on the go.  I opted for a cup full of dry Fred Meyer Shredded Wheat, and ate that when I arrived at the office along with some coffee.


The shredded wheat is gloriously plain and crunchy, and I managed to enjoy it.  I look forward to it with some almond milk and perhaps some apple.  Heated a la Erin?

The mo’nin flew by, yet seemed long, and eventually Chris and I ate lunch together around 12:15.  I had one piece of whole wheat, spread with 1/2 a wedge LCL, and topped with a few slices of peppered turkey and some romaine lettuce.  I also had half of a Jonagold apple, a serving of Wheat Things Toasted Chips, and a little bit of the CC.


 Bzzzzz…..the afternoon was quick and productive.  Around 5:15 Chris and I left for home, and we were amazed that the traffic was super light!  Yay!  We changed for the gym, I grabbed a few Wheat Thins Toasted Chips, and we headed out for the gym with the LB.  I knew the gym would be a nightmare, so I opted to run and walk with Lily around Chris’ gym while he worked out.  I haven’t exercised in the cold for a long time, and it is amazing how my lungs felt after running a bit.  Now, I am no runner by any means… it was probably stints of a few hundred yards that I ran, but it still felt good to do that and not feel like a wind bag. 

After the gym we stopped off to see our friend Maria at Fajitas.  The restaurant was totally empty!  Did everyone overdo their Superbowl celebrations and stay in tonight??!! 

The typical fare was in order: a Casuela that I drank too much of, tortilla soup sin crema, and La Casa to fnish things off.  I drank too much booze, ate too much soup, and felt like a bloated piggy on the way out!  At least it was mostly fluid, right?  That’s what I say at least…


The L-Word was pretty damn good tonight.  Do any of you watch it?  I thought Monday night TV sucked, but I found two shows (or at least repeats) that are good 🙂 

Now it is almost 10:30, and I’m going to bed to continue watching Top Gear and hit the hay.  Another long day is ahead tomorrow, so I best be ready to go!

Happy Birthday To Me….again! January 26, 2009

Hey everyone!  This girl’s Monday was not so bad, how about you?  I woke up not wanting to go into work, and consequently going in late, but was reasonably productive during the day. 

I should have had my oatmeal at home, b/c with all of my lateness and dropping off LB at my mom’s I didn’t get to work until after 10 😐


I used my scale to add ingredients, rather than using measuring cups, and I think I mis-weighed my liquids last time b/c this was really liquidy compared to normal.  Oops.  Moving on…

Eventually we ate lunch, like around 1, and it was a nice change from the norm:  tortilla with roasted tofu, celery, carrot, and green bell pepp, BBQ sauce, green leaf lettuce, and some Sriracha.  Yummmmmy!  I also had Wheat Thins Multigrain Crisps, 1/2 cup cc, and 1/2 a Fuji. 


I felt sorta hungry a few hours later, and I realized it was my allergies making me feel a bit weird.  I find it odd that one of the effects of allergies on my system is increased hunger, or a sense of being hungry.  I took and allergy pill, drank some water, and ate the rest of my Fuji.  Those are bald eagles at NW Trek Wildlife Park in the picture frame.


I had mega filing to do today, and didn’t get as far as I’d hoped.  I was organizing client files, updating profiles, and calling clients as I went.  Slow going, but really productive.

Tonight we had plans to go to McCormick’s to use a few gift certificates, one of which was from my birthday.  I had quite the spread:  coconut fried shrimp, filet mignon with green beans and carrots, and blueberry cobbler with vanilla bean ice cream.  And a Diet Coke with dinner, decaf coffee with cream afterward.  I ate moderately, sharing all of my food, and ended up pleasantly full but not uncomfortable. 


Happy Birthday to me….uh, I guess I’m celebrating on a quarterly basis now?  I had asked the waitress about using the certificates we brought, one of which was from my b-day as I said, so that’s why she put the candle in the dessert.  It was cute and fun!  I think I could get used to this quarterly thing.  Remind me to celebrate again in April!! 

After dinner and running an errand we headed home, changed, and left for the gym pretty much right away.  I dropped Chris off at Bally’s and moved on to 24 Hr. to get in 30 minutes on the stair mill doing level 8 intervals.  Not super fast, but enough to make me sweat 🙂  I’m gradually increasing the level as it becomes less difficult to do the fast interval for 2 minutes.  Progress, yeah!

Allergies are making me hungry again, I think.  Perhaps a small snack of 1/2 a banana and some Wheat Thins Crisps.  Not sure what else to make… I need to prep my oats, too.  Off I go before I forget!
